Mock “Bandara Salad”
I went to Cactus Club the other night for dinner (first time in over 10 years!) and ordered their Bandara salad, while eating it I couldn’t help but think how it was quite possibly the most amazing salad I’ve ever had. 
The next day, I was still thinking about this salad and how I could copy it. The menu states it has cajun chicken, corn, dates, feta, crispy chow mein, and honey-lime vinaigrette. Easy enough, since I don’t eat corn I omitted it. The result is the photo above. While it’s not as amazing it’s still pretty good but the vinaigrette needs some work, I need to figure out what else is in it besides lime, honey and olive oil.
